Add: 0.5 c. sugar; .25 c. veg. oil; 0.5 c. whole milk; 1 egg; 0.5 t. vanilla extract; 0.5 t. lemon extract (or lemon oil, if you have it ....).
Beat liquids with fork until well combined; slowly work flour into wet batter. When mix forms a dough, use ice cream scoop to form cookies. Place balls onto baking sheet (I use Silpat liners; parchment works, too). Smooth tops.
Bake at 350 for approx. 15 min., until bottoms are light brown and tops light golden. Cool on cooling rack.
Dip cookies into icing: 2 c. sifted conf. sugar; 3.5 T milk; 2 t. lemon extract (I use oil, a bit yummier). If necessary add more milk to get consistency you like. Place on rack until icing hardens. Good luck keeping this on hand for guests!
